One of my favourite ways to eat is to enjoy a mixture of different foods.  Today I used a variety of things from my fridge.  I had a salad with lots of sprouts which is a great idea to add to the side of any meal.  This will help to increase your nutrient levels throughout the day.  Sprouts are “living” foods and contain a high amount of enzymes.  Your body produces enzymes but always appreciate it when you consume enzymes.  It won’t have to work as hard and can focus on other functions in the body…and there are many!

I also cooked celery, red onion, spinach, kale and garlic together.  This is another great way to increase the amount of healthy vegetables in your diet.  Use extra virgin olive oil to get your dose of healthy fats.  As an alternative you can drizzle flax seed oil over your veggies after they are cooked.  Flax seed oil is very delicate and is sensitive to heat, light and oxygen.  It shouldn’t be heated or it can go rancid and create free radicals in your body.

I also added some homemade falafels to the plate.

Falafel
2 cans chickpeas (15 oz cans)
¼ cup shredded carrots
3 tbsp parsley
2 tbsp cilantro (coriander)
2 tbsp garlic
1 tbsp lemon juice
1 egg
1 tsp ground coriander
1 tsp turmeric
1 tsp sea salt
¼ tsp paprika

Blend all these ingredients in a food processor, then transfer to a mixing bowl.

Add ½ cup chickpea flour and mix with ingredients.  Form balls or burgers and fry in a pan with olive oil.  Enjoy!
