Once in a while I really crave a sandwich. I had a can of tuna in the cupboard so I experimented with some flavours. I added a little olive oil, red chili peppers, fresh squeezed lime, plain yogurt, fresh coriander (cilantro) and spring onions. Add that to some fresh whole grain bread and it’s delicious! I also added some sliced avocado and cucumber on top.
The salad had red and orange bell peppers, cherry tomatoes, bean sprouts and quinoa that was mixed in with a variety of greens. Get in the habit of having a salad with every meal to increase your dose of daily nutrients.
The salad dressing was a simple one – olive oil, flax seed oil, fresh squeezed lemon juice, sea salt, cracked pepper, minced garlic, parsley and basil. Blend it in a food processor or you can also whisk it together. A homemade oil based salad dressing will give your body the healthy fats it needs to carry out necessary functions.
