When I’ve been working all day and can’t find time to cook, one of my favourite meals is fresh pasta. My local store makes ravioli that is incredible! It is stuffed with a variety of things – sweet potato, portabello mushrooms, roasted red peppers and many more options.
Due to its freshness, it only needs to be cooked for about 3 minutes. In the meantime, I cooked garlic and shallots in olive oil then added mushrooms to the pan. This is a great way to add a little personality to your meal. I added a little fresh pesto to the mix and stirred everything together. I still have a few herbs left on my window so I added some fresh basil and chives on top. Delicious!
