A couple days ago, I posted a recipe for a lentil salad I made. When making a dish, I usually make extra so that I have it to snack on over the next few days. I had already mixed it in with a bed of mixed greens so I was looking for a different way to serve it. I had some endives (often called chicory in the UK) that needed to be used so I decided to add the lentils on top of the endive “boats”. Endives are a great way to serve dishes for those who are trying to avoid wheat or gluten.
If you’re avoiding bread products, you can use endives or other strong lettuce leaves to hold bruschetta toppings, guacamole or any other dips. This will help if you’re experiencing symptoms of bloating, heartburn or low energy.
When you find yourself hungry between lunch and dinner, try this idea out. Most people experience low energy dips mid-afternoon. This is a sign that your body needs fuel and when most people reach for caffeine and sugar. This will help temporarily but will create a larger crash after the caffeine and sugar are digested in the body. They cause blood sugar imbalances and increase your stress hormones. Rather than make you feel worse, the lentils and endives will give you energy without dragging you down.
