I generally use quinoa in soups, stews or oil based sauces, but decided to try it with a tomato base instead. It tasted delicious! It’s quite easy to get used to cooking the same way, or using the same ingredients. It is always a nice change to switch it up a little!
Tomato Based Quinoa
2 garlic cloves, minced
2 tbsp olive oil
1 red onion, chopped
1 courgette (zucchini), chopped
1 celery stalk, chopped
1 tomato, chopped
1 cup broccoli, chopped
1 red pepper, chopped
1 cup baby spinach
2 tbsp organic tomato paste
2 cups cooked quinoa
2 tbsp fresh basil
2 tbsp fresh parsley
Sea salt and pepper to taste
Cook the garlic and onion in olive oil then continue to add the remaining vegetables. Cook them until desired consistency but not for too long or they will begin to lose their nutrients. Add in the tomato paste, followed by the quinoa and stir everything together. Top with fresh herbs. Enjoy!
