It was time for a mid-afternoon snack and I was just about to pop out and get some groceries. It appeared that I didn’t have anything but quite often, if you really get creative you can come up with something. These are often the most unique dishes as well. After lunch, we often feel sluggish and tired which is when we usually reach for caffeine or a sugary snack. Our body is craving energy, so try to feed it with healthy fuel. Remember…we’re only as healthy as the fuel that we fill our body with.
I found some chickpeas, avocado, red chili peppers and feta cheese in my kitchen. I added all of these ingredients to a bowl and made a dressing on the side. I have a basil plant growing on my window sill so I used that in my dressing. I love basil in salads!
This salad is a healthy dose of essential fats. Next time you’re craving high fat foods like chips or crisps, add some avocado, nuts, seeds or olive oil to your meal. Incorporating more healthy fats into your diet will reduce cravings later in the day.

Avocado and Chickpea Salad
1 can organic chickpeas, rinsed and drained
1 avocado, chopped
1/4 cup feta cheese
1 red chili pepper, chopped
Basil Dressing
1 clove garlic, chopped
2 tbsp olive oil
2 tbsp fresh basil, chopped
Sea salt and cracked pepper
