I was looking for something to have as a snack and a mixture of fruit and vegetables in the fridge that needed to be used up. I decided to mix everything together and make a sauce. At first it may seem strange to mix green onions, cashews and fruit all in the same dish but the flavours actually worked nicely together. I had to make it again, I would probably make it more like a breakfast meal and leave out the celery and green onions. You could add bananas and cinnamon instead, to make it a little sweeter.
I liked the sauce so much that I added extra on top after mixing it with the rest of the dish. The sauce is a combination of plain yogurt, avocado, raw honey and fresh lemon. There are a wide variety of benefits here – healthy probiotics, essential fatty acids, natural enzymes, digestive aids and liver detoxifiers.
Alternative Fruit Salad
3 large apples (1 granny smith, 2 gala is nice), cored and cubed, not peeled
1 large orange, cubed
1 stalk celery, chopped
¼ cup raisins or craisins
2 spring (green) onions, chopped
½ cup toasted cashews
Dressing:
1 cup yogurt (organic plain)
1 avocado, mashed
½ tsp freshly grated lemon peel
2 tbsp raw honey
1 lemon, juiced
Combine the 5 dressing ingredients in a blender and puree until very smooth. Toss together all ingredients with the dressing. Taste to adjust the lemon-honey balance.
