I had some extra blueberries in my kitchen so decided to add them to my salad. I find that salads with fruit in them need other light pairings. Sliced almonds and sesame seeds are both good choices. Generally, anything too heavy will overpower the fruit. The same goes with the dressing – keep it a simple one when adding fruit or making a light summer salad.
Blueberry Almond Salad
3/4 cup blueberries
2 cups mixed greens
3 tbsp sliced almonds
2 tbsp sesame seeds
1/2 avocado (optional)
Mix 3 tbsp olive oil with 1/2 tsp of raw honey and one squeeze of a lemon and lime. Enjoy!
