Today was a soup and sandwich kind of day.  The hot summer weather has left for the moment so I felt like some soup to warm me up.  Luckily I had bought some soup from a farmers’ market a few days ago so I had it for lunch today.  It was lentil vegetable soup and was really delicious!  I added a little salad to the side and it was a complete meal.  The salad had beets, yellow peppers, mixed greens, mung bean sprouts and sunflower sprouts.

It’s great to make your own soups but if you’re out of time, a fresh soup is an excellent option.  Check in your local supermarket in the organic section.  A good way to get a preservative-free soup is to make sure it has a “use by” date.  A soup and salad combo is a great way to eat if you’re trying to avoid gluten and dairy.  Choose a soup or recipe that supports this and add a big salad to the side.  Your body won’t have to use much energy to break it down and you’ll feel healthier overall!
