Simple salads are often the best, especially when you have rich toppings.  I bought some yellow cherry tomatoes the other day because they looked so delicious.  Their flavour is very intense so I didn’t want to put too many toppings in the salad which can overwhelm them.  Cherry tomatoes contain a high amount of Vitamins A and C.  They also contain lycopene, which is linked to prostate health.

The base of my salad was rocket (arugula for the North Americans), which has a spicy flavour and is often described as “peppery – mustardy” taste.  If it’s too potent on it’s own, you can mix it with other greens or substitute it with these greens.

I’ve really enjoyed spicy foods lately so I added some red chili flakes on top of the salad.  Chilies contain capsaicin, which gives them the spicy and pungent character.  This capsaicin has anti-bacterial and anti-carcinogenic properties, and it also is found to reduce LDL cholesterol levels.  I love mixing the spicy taste with a salty cheese, like feta in this case.

Yellow Tomato Salad with Avocado Oil
1 cup rocket (arugula)
1/4 cup feta cheese, crumbled
5 yellow cherry tomatoes, chopped
1/2 red chili pepper, minced

Dressing
3 tbsp avocado oil
1/2 tsp grainy mustard salad
1/4 lemon, squeezed
Sea salt and cracked pepper
