During the warm summer months, our body usually craves cooling foods.  These foods are generally eaten raw and include lots of fresh fruits and vegetables.  Today I made a salad with lots of summer vegetables.

Here’s a fairly accurate version of the recipe.  Add more or less of what you have or don’t have in the kitchen…

Summer Salad
2 cups mixed greens
1 red pepper, chopped
1/2 cup red cabbage chopped
1/2 cucumber, chopped
3/4 cup chickpea and lentil sprouts

Dressing
2 tbsp olive oil
1 tsp nutritional yeast
1 tsp balsamic reduction
1/2 clove garlic
1 tbsp fresh lemon
