I made falafel balls a few days ago and kept them in my fridge.  I don’t cook them until I’m ready to eat them.  The batter is fine to stay in the fridge for up to about 4 days.  If you don’t feel like a typical meal, try arranging a few different things on your plate.  Don’t worry if the flavours don’t go well together, it’s a fun way to eat once in a while.

Along with the falafel balls, I had carrot sticks and hummus.  I also had a mixed green salad with yellow peppers, radishes, beets and quinoa.  It still feels like summer outside so it’s nice to eat lightly during these last few warm days.  Enjoy your day!
