I know this sounds like a funny name for a salad but when I looked down at it, those were the only colours present.  I didn’t plan it that way, it just worked out like this.  It was delicious though so I’d really recommend it.

The green things…avocado, green beans, snow peas, cucumbers, arugula (rocket), green lentils, pumpkin seeds, mint and green onions.

The white things…yogurt, feta, sea salt, quinoa and garlic (both white-ish).  I sprinkled a few red chili flakes on after to give it a little spice.

The great thing about “green” foods is that they contain chlorophyll which is naturally cleansing and detoxifying.  Eating a meal like this has enough protein, complex carbohydrates and fats to nourish you, without making you feel lethargic after.  This is a predominantly raw meal and the enzymes still remain in the vegetables.  Your body will break down these foods easily and have more energy for the rest of the day.

If you’re going to try this yourself, feel free to add any other green foods to the mix.  I’ll give you the approximate ingredients that I used but it’s okay to add more or less of a certain food.

The Green and White Salad
2 cups rocket (arugula)
1/2 cucumber, chopped
1 avocado, chopped
1/2 cup green beans, chopped
1/2 cup snow peas, chopped
1/4 cup pumpkin seeds
1 green onion, chopped
1/2 cup cooked green lentils (soaked, cooked and cooled)
3/4 cup cooked quinoa (soaked, cooked and cooled)
Red chili flakes to taste (optional)

Mint Yogurt Dressing
1/2 cup plain, organic yogurt
1/4 cup mint
1/2 lemon, freshly squeezed
Sea salt
1 clove garlic, minced
