In my previous blog, I posted a chickpea curry recipe that I made.  I added it on top of brown rice but made extra on purpose so I would have it for leftovers today.  I decided to add quinoa to it for a different twist.

I blended it together, added some fresh herbs and made a nice mixture of curry vegetable quinoa.  Remember when cooking, always make extra.  It will come in handy when you’re in a rush and don’t feel like cooking.  For the recipe, check in with the previous post.  Enjoy your day!
